Protect the taste and your espresso machine
How do you actually keep an espresso machine clean โ and why does that have such a big impact on your espresso?
Many home baristas pay close attention to beans, grinding, and extraction.
But one factor is often underestimated: maintenance of the machine itself .
Your espresso can be perfectly tuned, yet slowly start to taste worse as dirt builds up in the machine.
During my first years as a barista, I worked at an espresso bar where machines and coffee grinders regularly came in for service.
What struck me there was remarkable:
In approximately 80% of the cases, the cause was not a defective part, but insufficient maintenance .
Machines arrived with:
- brewing units clogged with old coffee oils
- steam pipes with milk residue
- limescale in pipes
- coffee grinders in which old grease had built up
Not because the machines were bad โ but because they were structurally forced to work too hard .
Why maintenance directly affects your espresso
An espresso machine works with three elements that all cause contamination:
- coffee oils from fresh coffee beans
- milk fats and proteins from frothed milk
- lime from water
Without regular maintenance, these can accumulate in the machine.
You eventually notice that in your cup:
- less fresh taste
- unstable extraction
- less powerful steam
- and parts that wear out faster.
Proper maintenance therefore ensures not only that your machine stays clean โ but also that your espresso remains consistent .
Four maintenance routines for home barista machines
Good maintenance does not consist of a single action, but of a few fixed routines that together ensure your machine stays clean and continues to function properly.
In this module, we look at four important maintenance routines:
- descaling the espresso machine
- cleaning the brewing unit
- cleaning the steam pipe
- cleaning the coffee grinder
Together, these routines form a simple maintenance system that helps prevent loss of flavor, blockages, and technical problems.
These principles are applicable to virtually all semi-automatic espresso machines for home use โ from Sage and Ascaso to ECM, Rocket, Rancilio, and La Marzocco .
What you will learn in this module
In this video module, you will discover how regular maintenance helps keep your espresso consistent and predictable .
You will learn, among other things:
- where contamination forms in an espresso machine
- why coffee oils, milk fats, and lime affect taste and performance
- which parts of your machine and coffee grinder need maintenance
- how a few simple routines help keep espresso consistent
- how good maintenance can prevent wear and tear and expensive repairs.
Proper maintenance is therefore an important part of Espresso Onder Controle .
This module belongs to the Espresso Under Control series.
This module is part of the Espresso Under Control series โ a series of short video modules for home baristas who want to better understand how coffee, extraction, and technique are interconnected.
Each module covers one part of the espresso process, from choosing coffee beans to extraction and maintenance of your machine.
The modules are based on insights from more than ten years of barista workshops by Geert-Jan de Baristaman , in which the same question keeps coming back:
Why does espresso sometimes turn out well right away โ and remain difficult with other coffee?
By following the modules step by step, you gain more insight into the choices that influence taste, extraction, and consistency.
When you know how to adjust your espresso correctly, proper maintenance helps to preserve that quality.
Therefore, this module connects logically to
Module 08 โ The three golden rules of espresso .
And when your espresso is stable, you can of course also use it as a base for cappuccino or latte.
You learn that in
Module 10 โ Coffee drinks and proportions .

Who is this module for?
Who is this module for?
This module is for home baristas who notice that their espresso changes slowly while their settings remain the same.
- You have adjusted your espresso correctly.
- The grind is correct.
- The extraction is going as you expect.
And yet, over time, the taste becomes less fresh, or the machine reacts differently than before.
Many home baristas then look for the cause in beans or settings.
But in practice the cause often lies elsewhere:
build-up of contamination in the machine.
In this module, you'll discover why regular maintenance is essential for anyone working with an espresso machine at home โ from Sage and Ascaso to ECM, Rocket, Rancilio, and La Marzocco , and other espresso machines.
What will change after this module?
What will change after this module?
After this module, you will look differently at maintaining your espresso machine.
You'll better understand why taste, extraction, and machine performance can slowly change when maintenance is postponed.
Many home baristas discover that regular maintenance is important not only for the longevity of their machine, but also for maintaining consistent coffee flavor .
With a few fixed routines you can prevent contamination from affecting the taste, flow time and operation of your machine.

Yes. This module is specifically designed for home baristas who want to continue using their espresso machine properly without the taste and performance gradually deteriorating. You will learn
- where pollution occurs
- why regular maintenance is essential for stable espresso
- and how to perform the cleaning routines.
What exactly will I learn in this module?
You learn
- which parts of an espresso machine and coffee grinder get dirty
- how that affects the taste and extraction
- which maintenance routines help keep your machine clean, reliable and consistent.
How long is the video?
The video module lasts approximately 9 minutes and explains the most important maintenance routines step by step.

This makes it easy to see what you need to clean and when, so that maintenance becomes a regular routine.
Also check out the handy cleaning checklists .
Why does my espresso suddenly taste worse, even though I haven't changed anything?
In many cases, this is due to contamination in the brewing unit, coffee grinder, or steam pipe. Built-up coffee fats, milk residue, or limescale can cause the water to flow through the coffee differently, resulting in flatter or more bitter flavors.
Why should I buy this module when there is so much free coffee information online?
Because maintenance is often underestimated. Many online tips focus on beans, machines, or adjustments, while contamination is one of the most common causes of flavor loss and technical problems. This module shows where contamination occurs and how to systematically prevent it.
All modules in the Espresso Under Control series are also based on Geertjandebaristaman's 10+ Specialty Coffee and barista workshop experience.
How do I get module 10 FREE with a review?
When you write a review of a purchased module, you'll receive Module 10 โ Coffee Drinks & Ratios FREE. The product page explains exactly how to leave a review and how to access it.
Which module can I take next?
If you'd like to better understand how freshness affects the flavor and crema of espresso, Module 7 โ Roast Date and Freshness is a good fit. Fresh coffee and proper care work together to ensure stable extraction.
Is this an online barista course?
Espresso Onder Controle isn't a general hospitality training program or a certification program. It's a practical, digital training for home baristas who want to brew better espresso on their own semi-automatic espresso machine.
The modules consist of focused video lessons and summary PDFs that you can follow independently. You choose the topics that best address your needs: bean selection, roasting, extraction, maintenance, or beverage composition. You don't have to complete a full course, but you can work with it like a toolbox.
The content is based on practical experience from home workshops and corporate training sessions, and is applicable to virtually any home piston machine โ from Sage and Ascaso to ECM, Rocket or La Marzocco Mini.
If you work with a fully automatic coffee machine such as Jura or a fully automatic De'Longhi, some principles are useful, but the system is primarily developed for machines where you have control over grinding, dosage and extraction time.
The goal isn't a diploma. The goal is control over your espresso.

Can I also learn this during a barista workshop?
Yes.
In addition to these online modules, I also offer private barista workshops at home on your espresso machine , where we look at your espresso machine, coffee grinder, and coffee beans together.
During such a workshop, you will learn step by step how to fine-tune your espresso and which choices influence taste and extraction.
