Your Sage can do a lot, but which setting do you need to change?

A Sage allows you to grind coffee, brew espresso, and froth milk at home. However, it's difficult to determine why the result changes. Multiple small choices influence each other, so randomly turning knobs usually leads to more confusion.

  • Your espresso tastes different every time

    Sometimes the coffee flows quickly and tastes thin or sour. Other times, hardly any coffee comes out and the result tastes bitter. Because of this, you don't know whether to adjust the coffee grinder, the amount of coffee, or the amount of espresso.

  • You are changing several settings at once

    You set the grinder finer, extend the set grinding time, and then also tamp harder. Because multiple things change simultaneously, you can no longer see which adjustment actually made a difference. During the coaching, you learn to check one step at a time.

  • Your milk is thickening or getting large bubbles

    Good milk foam for a cappuccino should be smooth, glossy, and pourable. This is often referred to as microfoam. You will learn how to first introduce a small amount of air and then swirl the milk to eliminate large bubbles.

Yes. Geert-Jan will visit you at home and practice with you on your own working Sage espresso machine and coffee grinder. The explanation will be tailored to your coffee beans, taste, favorite drinks, and any problems you encounter while making coffee. The workshop is practical training and not a technical repair service.

For both novice and more experienced home baristas who use a functional Sage semi-automatic machine but lack sufficient control over the coffee grinder, espresso, milk, or daily cleaning. A Sage setting only works when the steps align

For espresso, hot water passes through a compressed layer of ground coffee. During this process, the water extracts flavor compounds from the coffee. This is called extraction. If the water flows through the coffee too quickly, the espresso can taste thin or sour. If the water has difficulty passing through, the taste can become bitter or heavy.

That's why we don't just look at one grind setting. We also check the dosage, meaning how much ground coffee goes into the filter basket, and the yield: how much espresso ends up in the cup. After that, we measure the time and taste the result.

By making one change at a time, you discover which adjustment helps. This way, you build a method that you can also use later when you buy different coffee beans.

Step 1: We check your Sage, grinder and daily routine

First, we look at which Sage machine you use and how you normally brew coffee. For a Sage with a built-in coffee grinder, the grinder and espresso machine must be set up as a single unit. A compact Sage without a built-in grinder, on the other hand, requires a suitable separate coffee grinder.

Step 2. We make espresso measurable and understandable

We weigh how much ground coffee goes into the filter basket and how much espresso ends up in the cup. Then we measure how long that takes and taste the espresso. If the coffee flows quickly and tastes thin or sour, that requires a different correction than when the coffee barely flows and tastes bitter.

The workshop is suitable for a working semi-automatic Sage machine with an integrated coffee grinder or with a suitable separate coffee grinder. A Sage Bambino or Bambino Plus, for example, requires a separate coffee grinder. The machine must have a steam wand. Fully automatic machines, capsule machines, pod machines, manual lever machines, machines that only use pre-ground coffee, and defective equipment are not suitable.

What is the difference between Barista Focus and Barista Master?

Can I attend the workshop together or use multiple Sage machines?

One to five participants fall within the same workshop price. The workshop will still be 90 or 120 minutes long, meaning more participants will have less individual practice time per person. Guests may bring their own suitable machine, but each additional machine reduces the available treatment time per machine. More than five participants will be assessed separately in advance.

Can Geert-Jan repair my broken Sage?

No. The workshop is intended for operation, adjustment, coffee preparation, milk frothing, cleaning, and building a better routine. Minor operational and setting issues can be examined, but technical diagnosis and repair are outside the scope of the workshop. The espresso machine and coffee grinder must be functional at the start.

A Sage espresso machine gives you a lot of influence over the end result, but this means that various small choices can change the taste. The amount of ground coffee in the filter basket is often called the dose. The amount of espresso that then ends up in the cup is the yield. Together with the grind size and the time it takes for the water to pass through the coffee, these steps determine how much flavor is extracted from the coffee.
