Why this helps make better coffee
You want to know why your espresso flows nicely one time and splatters the next. With a bottomless portafilter, you can see the bottom of the filter basket. This open portafilter shows where the first drops appear and how the flow forms afterwards. This gives you more to pay attention to on your next attempt than just the time on the clock.
This holder has no spout under the filter basket. You can see the drops coming together and also when noticeably more coffee comes out on one side. That can be an indication that water is finding an easy path through the ground coffee. That is called channeling.
Use what you see along with what you taste and measure. A beautiful flow can still produce an espresso that does not suit your taste. A coffee scale with timer helps you to compare the amount of espresso and the brewing time.
More visibility of the placement, so you can practice more effectively.
Who is this suitable for?
For you, if you want to understand why your espresso doesn't flow the same every time using a suitable La Pavoni machine. The open bottom makes it visible where the coffee comes out of the puck. This is especially useful when you want to practice at your own pace and compare your attempts with each other.
The black plastic handle fits a calm, dark coffee corner. The color doesn't make your espresso any better; the benefit lies in the visibility of the flow and what you do with that information afterwards.
For whom is this not necessary?
If you want to make coffee quickly without looking, your current portafilter may be more practical. A naked portafilter can cause coffee to splash next to the cup while you are practicing. You do not need to replace a perfectly functional portafilter just for a different look.
Do not assume this 51 mm version for La Pavoni models made after 2000 will fit an unknown or older model without confirming with the supplier.
Does this fit your machine, routine or use?
-
Compatibility
The supplier calls this variant β51mm (La Pavoni after 2000)β. Use this designation as a starting point for your choice, not as a guarantee that every machine of this brand will fit. Check the model, version and year of manufacture of your machine. For an older or unknown year of manufacture, first have the supplier confirm the connection.
There are several 51 mm connections. The cams and the way the holder rotates in the group head also matter. Therefore, do not choose based on the diameter of your tamper alone. Compare it with your current holder and, if in doubt, ask the supplier for confirmation.
Another filter basket must remain securely clamped. Screw the holder on without forcing it and follow your machine's instructions when removing it. A change of holder or basket may also require a new coffee setting.

Advice from Geert-Jan the Barista Man
With over 10 years of experience in providing barista workshops at home, at businesses, and in Amsterdam, Geert-Jan is happy to share his advice.
From practice:
My advice as Geert-Jan the Baristaman: never judge an espresso solely by the crema under your filter basket. Taste it first. Then look at the amount in your cup and the extraction time. Use what you see in the flow to choose a specific next step, instead of changing everything at once every time.
My advice:
A worthwhile addition to a suitable La Pavoni if you like learning by observing and tasting. Start with a familiar coffee and change one setting at a time. This way, you get much more out of the open basket than if you choose different beans, a different dose, and a different grind at the same time.
Your regular bottomless portafilter doesn't have to go. It remains convenient for making coffee quickly or splitting it between two cups. Use this naked portafilter at a time when you can pay attention to your brewing process.
Here's how to use this in your coffee routine
A barista tool only really works well when you know where it fits into your routine.
Get into the routine:
Distribute coffee, tamp evenly, brew and clean
Usage:
Distribute coffee, tamp evenly, brew and clean
Geert-Jan's tip:
Keep the same amount of coffee for two consecutive attempts. Briefly note the espresso yield and time, and taste the result. Then choose one adjustment. This way you can assess the effect of your change.

Frequently Asked Questions
Does this holder fit every La Pavoni?
No, do not assume that. This group head variant is specified as 51 mm for La Pavoni after 2000. First confirm an unknown model or year of manufacture; a brand name alone does not prove compatibility.
Will this immediately give me a better espresso?
The holder shows you what happens under the puck. The taste will still depend on your beans, grind, and preparation. Use it to learn, and also taste and compare each attempt.
Why does the coffee splash next to my cup?
Because there is no spout to catch the coffee. A sudden local overflow can end up next to your cup. Use a wide cup and check your coffee distribution and dose before changing multiple settings.
How do I clean the handle?
Remove the black plastic handle with a soft, slightly damp barista cloth and then dry it. For the metal cup and filter basket, follow the manufacturer's cleaning instructions. Do not use abrasive materials.
What should I choose between wood and black?
First, check the machine model. Then choose the handle you prefer. A wooden handle gives a different look, but does not automatically improve extraction. Remove the handle separately and do not leave wood in water.
